KALE-YEAH! DRINK UP

     So my hubs (Chris) didn't used to eat many vegetables. Well, in all honesty-- he didn't eat any. When we first started drinking Shakeology- we noticed an immediate difference in our food cravings. I craved less sugar & caffeine while Chris began craving more alkaline ingredients. He started eating a variety of fruits and vegetables that he was completely unwilling to even try before. WOW. I'm talking a noticeable difference wishing a few days. Not only were are eating habits slowly changing, we were also seeing an increase in energy. We really knew this was a lifestyle change for us about 9 days in when we didn't get up to exercise that morning and skipped our Shakeology as well. The lack of energy was something that caffeine or energy drinks just wouldn't provide and the difference was in the feeling. We talked about how much better we feel throughout the day when having our Shakeology and decided that this was our thing now. We're total Beachboy & Shakeology people. :)

     Over the past few months I've seen Chris try so many new fruits and vegetables including, but not limited to: sweet potato, cucumber, asparagus, all color peppers, broccoli, spinach, kale, beets, jicama, purple potatoes, kiwi, papaya, mango, blackberries...and so much more. It has been a pleasure to see. Certain things have not been received as well as hoped, but hey- he's tried. He loves spinach, but isn't crazy for kale. We tried it a few ays and he had a little, but wasn't something he's eat and devour. No harm no foul.

     I do; however, love kale. So, it kinda presents a problem since it comes in huge bags! I don't want to waste it, and as much as I like it- I can't eat all of it before it goes bad. I experimented with a few ways to store it and prolong it's storage time with varying degrees of success, but ultimately we found a way to use it up quick. You guessed it- in a smoothie! We use Shakeology and my husband LOVES the strawberry, so here's our recipe:

1 cup unsweetened cashew milk  <-- You can use soy, almond, coconut, or whatever you prefer.

1 scoop strawberry Shakeology  <-- You can use greenberry, tropical strawberry vegan, chocolate, or vegan chocolate.

1/2 a frozen banana <-- We freeze ours bc we buy them in bulk and organic. Then we peel, cut in half, and freeze. It gives an awesome creaminess.

1 cup raw kale, stems removed

1/2 cup of ice

Place all ingredients in a blender, and blend well- until smooth. Enjoy cold. Let me know if you try and enjoy this and feel free to share any of your own favorite smoothie recipes. I love trying new ideas.
